Awesome Maine Lobster
Bisque
2 each 1½ lb. live Maine lobsters, cooked
2 tablespoons butter
2½ cups milk
2 cups heavy cream
1/8 teaspoon salt
1/8 teaspoon freshly ground pepper
Remove all the meat from the lobster shells and cut into
bite size pieces. Set meat aside and discard shells and
intestinal tract.
Melt the butter in a large heavy saucepan and add the
lobster meat, sauté for 2-3 minutes over medium heat.
Add the milk, cream, salt and pepper, cooking until hot
but do not bring to a boil.
Remove pan from heat and ladle into soup bowls; serve
immediately with oyster crackers if desired. Serves 4.
