Hugh's Low-Fat Lobster Stew
(Serves 8)
1¾ pounds Maine lobster meat (5 pounds in shell yields 1
pound of meat)
2 ounces butter
½ gallon 2% milk
½ cup heavy cream
To cook Maine lobsters: Steam in large pot until tail
registers 160 degrees Fahrenheit on meat thermometer.
Sauté Maine lobster meat in butter gently. Add milk, then
cream. Heat slowly for one half hour, or so. Let sit
overnight for best flavor.
