Lobster Salad on
Grilled Portabellini® Mushrooms
36 Portabellini® mushrooms, about 2”
diameter (cremini)
2 Maine lobsters – 1 lb., cooked, meat removed and
diced
¼ cup mayonnaise
1 Tablespoon tarragon, fresh, chopped
1 Tablespoon chives, fresh, chopped
¼ of a zucchini squash, outer part only diced very
small like confetti
¼ of a yellow squash, outer part only diced very small
like confetti
To taste, salt and pepper
Brush Portabellini® mushrooms with olive oil, salt and
pepper. Grill until done.
Mix remaining ingredients well, check for seasoning.
Spoon into Portabellini® mushrooms and serve.
