Lobster Earland
1 leek
1 Tablespoon butter
1 teaspoon sugar
3 ounces lobster claw meat
1 large shiitake mushroom
½ teaspoon garlic
½ teaspoon shallots
1 pinch red chili
½ teaspoon lobster base
¼ teaspoon lemon juice
2 ounces white wine
1 Tablespoon corn starch
8 pieces Belgian endive - blanched
To garnish chopped chives
Cut leeks into 3 inch strips. Sauté leeks in butter
and sugar, until light brown. Add lobster, shittake
mushroom, garlic, shallots and red chili. Sauté
approximately 2 minutes.
Make sauce by combining lobster base, lemon juice,
white wine, and corn starch in a sauce pan and cooking
until sauce thickens. Remove from heat.
Lay out plate with 8 pieces of Belgium endive leafs.
Add lobster sauce to middle, and top with lobster claw
mixture. Sprinkle with chopped chives.
