Lobster - End of Summer
Steam some of the lobster. Chop finely, add
salt & pepper, 1 teaspoon of mustard miso.
Take the rest of the lobster. Cut into 1 inch
pieces and sear in garlic oil, spicy sesame
soy sauce and chopped chives
Place chopped lobster in center of plate,
place seared lobster around. Lightly spoon
sauce on to plate. Decorate with lobster
shell, Belgium endive, micro greens.
Sauce
200 cc Soy Sauce
75 cc Sesame Oil
25 cc Oyster Sauce
25 cc Chili Bean Sauce
85 gr Sugar
50 gm Chopped Scallion
50 gm Chopped fresh ginger
Salt and freshly ground black pepper
