Maine Lobster Quiche

(Serves 8)

1 each 9 inch partially baked pie crust
2 tablespoons minced onion
2 tablespoons butter
1 can (3 oz) sliced mushrooms (reserve broth)
4 each extra large eggs, beaten
¾ cup light cream
1 dash salt
1 dash white pepper
1 pinch nutmeg
2 cups Maine lobster meat, cooked and cut into bite size pieces
¼ cup Swiss cheese, grated

Partially bake the pie shell and let cool. Sauté onions in butter until tender. Add mushrooms (setting 10 slices aside for later use) and continue to sauté until hot. Combine beaten eggs, cream, mushroom broth, salt, pepper and nutmeg. Fold in sautéed onions, mushrooms and lobster meat. Pour into pie shell and sprinkle with cheese. Bake at 375° for 35 minutes. After 20 minutes, top with remaining mushrooms. When done a knife inserted near center will come clean. Let stand for 5 minutes before cutting.
