Lobster Rabbit

(Serves 4)

2 Tablespoons green pepper, chopped
¼ cup butter
2 Tablespoons flour
¼ teaspoon salt
1 dash cayenne
½ teaspoon powdered mustard
½ teaspoon Worcestershire sauce
1 cup tomato juice
1 cup grated sharp Cheddar cheese
1 each egg, slightly beaten
¾ cup milk
1 cup cooked lobster meat, diced
8 pieces hot toast
8 pieces crisp bacon

In top part of double boiler or direct heat, cook green pepper in butter for 2 to 3 minutes. Blend in flour and seasonings. Put over boiling water and stir in tomato juice. Cook, stirring until thickened. Add cheese, egg and milk; cook stirring for 3 or 4 minutes. Add lobster meat and heat. Serve on toast, with bacon strips on top.
