Bobster Lobster
Roll-Ups
2 cups
cold (cooked) lobster meat
1 to 2 Tablespoons scallions, thinly sliced
1 cup Swiss cheese, shredded
1/2 cup mayonnaise
2 teaspoons of fresh lemon juice
2 teaspoons salt
dash of pepper
4 flour tortillas
4 slices bacon, cooked
Fresh red or green leaf lettuce
1 tomato, sliced (optional)
Mix first seven ingredients together.
Heat flour tortillas in microwave with damp
paper towels before assembling.
Spread mixture evenly over each tortilla.
On top of each tortilla add once slice of
bacon, a few lettuce pieces and tomato slices.
Roll them up.
This recipe is for 4 roll-ups — adjust your
recipe for the number of roll-ups you need.
