Maine’s Best Appetizers

Maine new potatoes, cooked, skins left intact
½ cup lobster meat, minced
¼ cup sour cream
1 teaspoon horseradish
2 tablespoons butter, softened
¼ teaspoon salt
¼ teaspoon black pepper
2 tablespoons chives, minced
As needed chives, for garnish
Cool the potatoes well. If necessary to make them stay
upright, "shave" a tiny sliver from the bottom. With a
grapefruit spoon scoop a well in the top of each about
the size of a thimble. Reserve this potato for another
use. Mix all other ingredients. Fill each "well" with
this mixture. Cut extra chives into approximately 3/4"
lengths, and place two in an "x" pattern on each
potato for garnish.
