Lobster Crostini
 
1 loaf French bread
6 garlic cloves, roasted
Lemon juice
3 parsley sprigs, finely chopped
Salt and pepper
1/2 cup mayonnaise
6 ounce fresh, frozen, or canned lobster (If using canned or frozen lobster meat, drain thoroughly)

Cut French bread into 1 inch thick pieces and let air dry or toast lightly. (Approximately 12 slices).

To roast garlic, peel, coat with olive oil and cook until golden brown in a hot oven for approximately 20 minutes.

While garlic is still warm, place in a bowl; add lemon juice, parsley, salt, and pepper. Mash completely and mix well. Add mayonnaise. Finely chop half of the lobster meat and add to the garlic mixture.

Spread evenly onto bread. Use remaining lobster meat for garnish
