Lobster A La Darling
1½ cups heavy
cream
3 each egg yolks, well beaten
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper
3 cups cooked lobster meat, finely diced
1 Tablespoon butter
2 Tablespoons sherry
Over hot water, heat cream. Stir in egg yolks and
seasonings. Stir until mixture starts to thicken.
Add lobster, butter and sherry. Cook one minute longer
over hot water.
Serve on toast points or in puff pastry shells. May be
served hot or cold.
