Lobster Strudel
1 pound cooked Maine lobster
meat
1 cup sliced mushrooms
¼ cup finely chopped onion
½ teaspoon onion salt
dash white wine
dash lemon juice
1½ cups skim milk
½ cup flour
½ cup butter or margarine, melted
1 pinch salt
1 pinch white pepper
1 each 11" x 16" pastry shell
1 bunch asparagus, tips only
Sauté lobster, mushrooms, onions, onion salt, wine and lemon juice
in wok and set aside.
Combine milk with melted butter, add flour, salt and pepper to
make a white sauce. Add the lobster mixture from above.
Center the lobster on pastry sheet from end to end and cut ½"
strips down both sides evenly and twist over mixture for strudel
effect. Let rise 30-40 minutes. Garnish with asparagus tips and
bake at 400 degrees for 30 minutes.
